The Santa Lucia Highlands is a cool-climate winegrowing district, located off the Monterey, CA coast. Chardonnay grapes grow especially well there and are able to take advantage of the sunshine in the morning before the winds pick up in the afternoon, which slows down photosynthesis. This provides the grapes with a longer ripening period. We wanted a Chardonnay that was slightly buttery, yet balanced, and what we came up with is far beyond our expectations. This Chardonnay sat on oak for a little over a year, a perfect amount of time in our opinion. With balanced acidity, flavors of crisp apple and a hint of tropical fruit meld into a round mouth feel with a soft vanilla oak finish.
